Enhance Your Health with Cinnamon Coconut Macaroons


Everyone enjoys a treat. Especially those of us who don't readily find goodies we tolerate away from home. Whether you're avoiding gluten, dairy, soy, eggs, flour, or all of the above - I think you'll find this recipe pleasing.

Not only can the ingredients be thrown together in a pinch, but they're rich in beneficial fats like Medium Chain Trigylcerides (MCT's) from the coconut butter and coconut flakes, and omega-3 fatty acids from the hemp and chia seeds.

These nourishing fats fuel the brain, delay absorption of the honey's natural sugars into the bloodstream, and combine nicely with a mineral rich source of salt - a great way to replete essential minerals, especially for those of us in detox mode.

As fall nears, reach for cinnamon to help enhance circulation while combating colds, coughs and infections due to it's warming properties and anti-fungal, anti-viral and anti-bacterial benefits.

In other words enjoy these tasty bites while protecting your brain, replenishing your cells and avoiding germs - now that's what I call a treat!

Gluten-, Dairy-, Soy-, Egg-, Flour-Free

Ingredients: 1 cup finely shredded coconut, divided

1 cup coconut butter

1/2 cup pepitas

1/2 cup hemp seeds

1/2 cup raw honey

1 tablespoons chia seeds

1/2 teaspoon Sea salt, Celtic salt, Himalayan salt or Real salt (optional)

2 drops cinnamon doTERRA essential oil (or 1 tsp. cinnamon spice)

*Full Disclosure: doTERRA is one of my affiliate partners. Directions: 1. Combine all ingredients except for 1/2 cup of shredded coconut. Mix well and form into balls.

2. Coat balls in the reserved shredded coconut and store in the fridge.
